Ingredients

  • 2 large flour tortillas (or whole wheat)
  • 1/4 cup hummus (any flavor)
  • 1 cup fresh spinach or mixed greens
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/2 bell pepper (any color), thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Lay the tortillas flat on a clean surface or cutting board.
  2. Spread 2 tablespoons of hummus evenly over the center of each tortilla, leaving a 1-inch border around the edges.
  3. Layer half of the spinach or mixed greens on top of the hummus on each tortilla.
  4. Add half of the shredded carrots, sliced cucumber, and bell pepper slices on top of the greens.
  5. Sprinkle crumbled feta cheese (if using) over the veggies, then season with a pinch of salt and pepper.
  6. Fold the bottom of each tortilla up over the filling, then fold in the sides and roll tightly to close, forming a wrap.
  7. Slice each wrap in half diagonally, if desired, and serve immediately. Enjoy your fresh and healthy veggie wrap!
