Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 bell pepper (any color), diced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 2 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 2 green onions, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion, bell pepper, and carrots to the skillet. Stir-fry for 3-4 minutes until the vegetables begin to soften.
  3. Stir in the frozen peas and minced garlic. Cook for another 2 minutes until the peas are heated through and the garlic is fragrant.
  4. Push the vegetables to one side of the skillet. Add the remaining 1 tablespoon of oil to the empty side, then add the cooked rice.
  5. Stir-fry the rice with the vegetables for 3-5 minutes, breaking up any clumps, until the rice is heated through and slightly crispy.
  6. Drizzle the soy sauce over the rice and veggies. Stir well to combine and cook for another 1-2 minutes.
  7. Season with salt and pepper to taste. Stir in the sliced green onions (if using) for a fresh finish.
