Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin or line it with parchment paper.
Roll out the refrigerated pizza dough on a lightly floured surface. Cut it into 24 equal squares (about 2x2 inches each).
Press each dough square into the cups of the mini muffin tin, forming small dough cups with edges slightly raised.
Spoon about 1 teaspoon of pizza sauce into each dough cup. Sprinkle with shredded mozzarella cheese, then add chopped pepperoni or other toppings if desired.
Drizzle the tops lightly with olive oil and sprinkle with Italian seasoning and a pinch of salt.
Bake in the preheated oven for 12-15 minutes, or until the dough is golden and the cheese is melted and bubbly.
Remove from the oven and let the pizza bites cool in the tin for 5 minutes. Then, carefully transfer them to a serving platter. Serve warm and enjoy your mini pizza bites!
