Leftover Turkey Fried Rice

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 1/2 cups leftover cooked turkey, shredded or diced
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 cup mixed vegetables (peas, carrots, corn, etc.)
  • 2 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 2 large eggs, beaten
  • 2 green onions, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion and cook for 2-3 minutes until softened and translucent.
  3. Stir in the minced garlic and mixed vegetables. Cook for another 3-4 minutes until the vegetables are tender.
  4. Push the veggies to one side of the skillet. Add the remaining 1 tablespoon of oil to the empty side, then pour in the beaten eggs. Scramble until fully cooked, then mix with the veggies.
  5. Add the leftover turkey and cooked rice to the skillet. Stir well to combine everything evenly.
  6. Drizzle the soy sauce over the mixture and stir-fry for 3-5 minutes, until the rice is heated through and slightly crispy.
  7. Season with salt and pepper to taste. Stir in the sliced green onions (if using) for extra flavor.
