  • 3 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat your grill to medium-high heat (about 400°F/200°C). If using an indoor grill pan, heat it over medium-high heat with a light coating of oil.
  2. In a small bowl, whisk together 2 tablespoons of olive oil, the lemon zest, lemon juice, minced garlic, oregano, thyme, smoked paprika, salt, and black pepper to create a marinade.
  3. Pat the sea bass fillets dry with paper towels. Brush both sides of the fillets with the marinade, ensuring they’re well coated. Let them sit for 5-10 minutes to absorb the flavors.
  4. Lightly brush the grill grates with the remaining 1 tablespoon of olive oil to prevent sticking. Place the sea bass fillets on the grill, skin-side down if applicable. Grill for 4-5 minutes per side, depending on thickness, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Avoid overcooking to keep it tender.
  5. Carefully remove the fillets from the grill using a spatula. If any marinade remains, drizzle it over the cooked fish for extra flavor.
