Greek Salad with Grilled Chicken

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil (for grilling)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups romaine lettuce or mixed greens, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • For Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Brush the chicken breasts with 1 tablespoon of olive oil, then season with oregano, salt, and pepper.
  2. Grill the chicken for 4-5 minutes per side, or until fully cooked (internal temperature reaches 165°F/74°C). Remove from the grill and let rest for 5 minutes, then slice into strips.
  3. In a small bowl, whisk together the dressing ingredients: 1/4 cup olive oil, red wine vinegar, minced garlic, Dijon mustard, oregano, salt, and pepper. Set aside.
  4. In a large bowl, combine the chopped romaine or mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and crumbled feta cheese.
  5. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  6. Divide the salad among four plates or bowls. Top each portion with sliced grilled chicken.
