Classic Christmas Pudding

Ingredients

  • 1 cup raisins
  • 1 cup currants
  • 1/2 cup chopped dried figs
  • 1/2 cup chopped candied peel
  • 1/2 cup dark brown sugar
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs, beaten
  • 1/2 cup suet or butter
  • 1/2 cup brandy

Instructions

  1. In a large bowl, mix all the dry ingredients together.
  2. Add the eggs, suet (or butter), and brandy, and mix well.
  3. Grease a pudding basin and pour in the mixture, pressing it down lightly.
  4. Cover with parchment paper and tie securely with kitchen string.
  5. Steam the pudding for 4 hours, making sure to top up the water as needed.
  6. Remove from heat and let cool. Store in a cool, dark place until serving.
  7. Reheat by steaming for 1 hour before serving. Enjoy!
