Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, shredded coconut, cinnamon, and a pinch of salt. Stir to mix the dry ingredients evenly.
  2. In a small bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth. If the almond butter is too thick, microwave it for 10-15 seconds to soften.
  3. Pour the wet mixture into the dry ingredients and stir well with a spatula or your hands until everything is fully combined and sticky. If using, fold in the mini chocolate chips and chopped nuts.
  4. Using your hands or a small cookie scoop, roll the mixture into 1-inch balls (about 1 tablespoon each). You should get around 24 bites. If the mixture is too sticky, wet your hands slightly to make rolling easier.
  5. Place the energy bites on a parchment-lined plate or tray. Refrigerate for 30 minutes to firm up (optional but recommended for better texture).
  6. Transfer the bites to an airtight container and store in the refrigerator. Serve your almond butter energy bites chilled or at room temperature for a quick, healthy snack!
