Ingredients

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, cocoa powder, vanilla extract, and a pinch of salt.
  2. Stir in the dark chocolate chips and chia seeds (if using) until everything is evenly mixed. The mixture should be sticky and hold together when pressed.
  3. If the mixture feels too dry, add a teaspoon of water or more honey; if too wet, add a bit more oats or cocoa powder. Adjust to a workable consistency.
  4. Using your hands or a small cookie scoop, roll the mixture into 12 equal-sized balls, about 1-2 tablespoons each.
  5. Place the energy balls on a plate or tray lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
